This listing is for a Vulcan 40 gallon electric braising pan model VE-40 with the draw valve power tilt option.

What we know

Please take a minute to enlarge the pictures to get a close up view of this beautiful braising pan. This skillet looks new simply because it was used very little. It comes from a small school system and was bought right about the time that they decided to go with pre-made food for the lunch program. Schools no longer actually cook much. The school lunches are now made off-site and warmed up at the school.

This beautiful skillet was bought along with 2 others, delivered to a school location about 3 months later, covered with plastic soon after and used as a small table in their kitchen until it was taken back to the warehouse.

The all stainless construction is flawless and has the look of chrome and as you can see, the pan is in new condition. Using 16,000 watts the pan heats up quick and the thermostat works perfectly. The controls are simple and problem free and the pan tilts strong and quiet.

There are a few differences between Vulcan skillets and all of the rest that should be pointed out. First they are constructed out of stainless steel and in this case, even the interior frame and that’s a pretty big deal. All of the others will rust out over time because of the sheet metal used in the frame. Another really nice difference is that the lid stays where you leave it. No need to have a separate vent on top that collects grease and food build-up that needs to be removed and cleaned. When you need to vent just raise the lid about an inch and it will stay there. Vulcan incorporates a drop-away pan holder in the front of the skillet. Not only does it come in handy for pouring product into and clean up but it’s a great spot to put your spices and tools when in use. When you don’t need it just pop it down and out of the way. 

This pan uses the much more efficient 480 volt power. 480 volt allows you to cook using 16,000 watts while only using 23 amps! If you have 480 volt power, you only want 480 volt equipment because it is the most cost effective way to go and it is much more controllable than gas.
