This listing is for a new Cleveland “PowerPan” 40 gallon gas braising pan model SGL-40T1. My opinion of this pan is that, because of the large square pan design along with the ability to go from 160,000 to 200,000 btus with the flip of the switch, it is the highest producing pan built today – bar none. If you operate a large catering business or you need to service a lot of people all at about the same time and you need speed, versatility and consistency. This is your pan.

You would want to use it on low power for soups, stews, steaming veggies or anything that might scorch. You will also have the option to flip the switch up to high for frying and braising. It’s a great option to have and the Chef will love the control and versatility.

What we know…

This beautiful braising pan comes from a school system that really didn’t have a use for it. These days schools just heat up pre-made products. Because of that, this pan spent almost all of its life covered and used more as a table. The all stainless construction is flawless and has the look of chrome. Look close at the cooking surface of the pan. It is excellent with that sort of velvety Teflon finish that only comes with a new pan. The controls are simple and problem free. The power tilt uses a massive overbuilt gear motor and tips the pan quiet and effortless. The gallon/liter marking are easily seen on the back of the pan.

Also, check out the most important part of any gas appliance – the burner under the pan. This area must be in clean, rust-free condition not only for the longevity of the equipment but for safety reasons as well. When buying anything gas, always demand a good, clear close-up picture of the burner. It will go along way to prevent future grief.
