There really is no argument as to who makes the best commercial grade ovens in the world. Blodgett has been building ovens since 1935 and have always been the best by far. Blodgett ovens are still built by American’s in Burlington, Vermont and they have earned a solid reputation for long lasting reliability, high performance and consistency. If you have been in the commercial food industry for more than 10 minutes you already know that Blodgett is the only serious choice for the professional Baker or Chef when it comes to commercial bake ovens.
Not everyone wants to have the flavor of a franchise. Deck ovens allow you to create things a bit more slowly and give what you bake a richness of character that you just can’t achieve by whipping it inside of a convection oven or sending it through a conveyor oven. What any professional Chef creates defines them and this type of old school oven allows that creativity to happen. It’s the type of oven you get to know and have a long standing relationship with. It will bring instant ambiance and professionalism to any commercial kitchen and really deserves to be out where the public is able to see it. The oven, especially this beautiful oven, will be the heart of any kitchen.
The Blodgett 981/981 build design is uncomplicated and very simple. If you are a bakery or pizza shop out away from any sort of repair service, these are the sort of super dependable ovens you want. Also, these ovens have never been used for roasting meat and that might be a big consideration if you need an oven for baking breads, wedding cakes or pies and pastry.
What we know…
The ovens look new simply because they were never really used much. Take a minute and enlarge the pictures. I’d like you to compare these ovens to any of the others either on-line or at your local dealer. If you were to set a new – right out of the box set of ovens next to this one you would be very hard pressed to tell the difference… until you compare the invoice. The center pull doors open and close with a nice snap and there aren’t many signs of use. The all business stainless exterior looks like chrome and as you can see the inside is rust free and new.
Check out the close-up picture of the most important part of any gas appliance – the burner. The burner has to be in clean rust-free condition not only for the life of the appliance but for safety reasons as well. When buying anything gas always demand two things. Demand a warranty of at least 30 days and demand a close-up picture of the burner. Asking for those two simple things enable you to cut right through any sort of seller BS and you eliminate a lot of possible issues right away. In this case the burner is new!
The deck size is 42″ x 32″ and part of the appeal of a quad deck is the combined deck space. Added together, the deck would measure 168″ x 128″ or 150 square feet of cooking area! The 7″ high cavity makes them much more controllable, eliminates hot or cold spots and gives you a faster – more consistent bake. Whether your business is high-end pastry or pizza, these ovens really are a great way to go!
You have a few choices…
Normally I would install new stones at least in the upper two decks but if you specialize in high-end wedding cakes and you have no need for stones, why have to pay for them? If you are looking at these ovens to bake pizza, these are a great choice but you will most likely want stones. I will give you new stones at my cost ($290. ea) and ship them direct from the factory in Chicago to you. The stones measure 42″ x 30 3/8″ x 1″ and they cover each deck. I have used a lot of this thickness of stone for many years and everyone has been very pleased.
Currently the temperature range with these ovens is 200 to 500 degrees. If you need a higher temperature I will install new thermostats that have a temperature range of 300 to 650 degrees at my cost for the parts of $188. per thermostat (part number 11527). Please allow a few days to get the parts in and installed.
Currently the ovens are set up for natural gas and if you need them set up for propane we will do that for you at no charge.
The footprint measures 60″w x 39″d x 69″h with the locking casters.
